Black Garlic Sauce vs Black Garlic Paste: Read the Ingredient List

A bottle labelled black garlic sauce and a jar labelled black garlic paste may contain very different formulations.
What a paste usually means
A paste may be mostly mashed black garlic, but commercial products can also include oil, salt, vinegar or preservatives. The name alone does not tell you the percentage of black garlic.
What a sauce can include
Sauces are typically formulated for flavour and pouring consistency. They may contain water, sweeteners, soy sauce, vinegar, spices, thickeners and other ingredients.
Why this matters nutritionally
Added salt, sugar and other ingredients can change the nutrition profile substantially. Do not borrow nutrition values from whole black garlic for a prepared sauce.
Why this matters for research
A culinary sauce is not the same preparation as whole black garlic or a research extract. Health studies on black garlic should not be used as evidence for every sauce carrying the words “black garlic.”
How to compare products
Read the ingredient list in descending order, serving size, nutrition information and storage directions. Choose based on the cooking job and the actual formulation.
