Black garlic in Indian cooking works best when it is treated as a sweet-savoury ingredient rather than as a direct replacement for raw garlic.
Dal and lentil dishes
Mash a small amount into a finished dal or tadka sauce for depth. Because black garlic lacks the aggressive raw-garlic bite, it can complement rather than dominate slow-cooked flavours.
Chutneys and dips
Blend it with roasted tomato, chilli, herbs, yogurt or sesame-based dips. Its sticky texture helps it disappear into smooth condiments.
Marinades
Combine black garlic with ginger, spices, yogurt or citrus for paneer, mushrooms, vegetables, chicken or other proteins. Adjust sweetness because black garlic itself can contribute a sweet note.
Gravies and sauces
Stir mashed black garlic into tomato, onion or nut-based gravies near the end of cooking so its complex aroma is not completely lost under prolonged high heat.
