Does Black Garlic Cause Garlic Breath? Aroma Compared With Raw Garlic

Black garlic breath is a common concern for people who dislike the strong aroma of fresh garlic. Black garlic is generally less sharply pungent, although it is not completely aroma-free.
Why raw garlic smells strong
Crushing fresh garlic activates enzyme chemistry that rapidly produces allicin and a range of volatile sulfur compounds. These compounds contribute to the familiar sharp smell.
What ageing changes
During black-garlic production, prolonged heat and humidity substantially change this sulfur chemistry. Reviews describe lower allicin-related pungency and a different volatile profile.
What black garlic smells like
Whole black garlic is commonly described as sweet, roasted, balsamic-like or savoury rather than aggressively garlicky. Individual products still vary with processing.
Can any garlic product affect breath?
Yes. Sulfur-containing foods can influence breath and body aroma differently between people. “Less pungent” should not be interpreted as “guaranteed no smell.”
Capsules change the sensory experience
Capsules avoid tasting the ingredient directly, but the outer format does not prove that no sulfur-related aroma can occur after digestion.
